The filled waffle is one of my favorites. I've always wondered how they're made, how the filling gets inside the waffle. I now know the theory. In practice, well, it got messy... I should maybe not have tried to make it gluten free on my first attempt...
After letting the dough rest, it was really sticky. I'm not sure it rose enough. I then experimented and mixed the dough again adding more flour, until I could better work with it. It was still difficult to work with and I ended up filling the waffles on the waffle maker. The rolled dough was too thick and I filled it with too much filling that was too liquid. I also tried spreading the waffle maker with icing sugar to caramelize the waffles but that didn't work.
The cooked waffles still tasted alright but were a bit too dry. I would also add a bit more cinnamon the next time I try.
I like when the waffle taste of cinnamon and prefer it filled in with cherries or plums but you can really fill them with any fruits you like. You can even make them savory.
WAFFLE:
To make the waffle gluten free, I used the Dovesfarm self-raising white flour. I also added 1 teaspoon of bicarbonate of soda and 1 teaspoon of xanthan gum. I let the dough rest for 1 hour and 15 minutes only. As I didn't have fresh yeast, I used half a pack of dry yeast.

Ingredients:
* 250 g flour
* 100 ml semi-skimmed milk
* 40 g unsalted soft butter
* 50 g sugar
* 1 eggs
* 1 eggs yolk
* 12.5 g fresh yeast
* 1/2 teaspoon cinnamon powder
* 2 g salt
FILLING:
I've made a plums filling. I usually add sugar and cinnamon to my taste during the cooking. It shouldn't cook for too as the filling shouldn't be too liquid.
Ingredients:
* plums
* sugar
* cinnamon sticks or powder
Gluten free:
* Use a mix gluten free flour
* Add a few grams of bicarbonate of soda and/or baking soda and/or xanthan gum
* Let the dough rise for a shorter time
Lactose free:
* Use lactose free milk or oat milk
* Use lactose free butter or margarine
Preparation time: 30 minutes
Resting time: 2 hours
Cooking time: 30-60 minutes
Cookware:
* Waffle iron and its filled waffle plate
* Mixer or spatula
* Scale
* 3 bowls
* 2 cooking pots
* Sieve (optional but recommended)
Method:
Waffle:
* Prepare all your ingredients:
- Take 40 g butter and 12.5 g yeast out of the fridge
- 1st bowl: 250 g flour
- 2nd bowl: 50 g sugar, 1 egg, 1 egg yolk
- 3rd bowl: 50 ml milk, cinnamon powder and salt
- 1st pot: 50 ml milk
- 2nd pot: 40 g butter
* Warm the milk in the pot at a very low temperature
* Add the yeast and stir gently until it's diluted
* Make a fountain in the flour in the 1st bowl
* Pour the diluted yeast in the fountain made in the flour
* Add the sugar and eggs from the 2nd bowl
* Incorporate the flour (your mixer set at a low speed)
* Melt the butter and add it
* Add the milk, cinnamon powder, salt from the 3rd bowl
* Mix until you get an homogeneous dough
* Cover the dough and let it rest 2 hours
Tips:
* If you use dried yeast, no need to mix it with warm milk, mix it directly with the flour
* Sieve the flour to avoid lumps
Warning:
* Don't boil the milk or mix the salt directly with the yeast, it will deactivate the yeast
* Don't let the dough rest for too long, it could damage the taste and the rise of the dough
Filling:
* Slowly cook the fruits with sugar and cinnamon
Warning:
* Don't cook your fruits for too long, they shouldn't be too liquid in order to hold properly in the dough
Cooking:
* Divide the dough in balls of 50 g
* Pre-heat the waffle iron set at a high temperature* Spread the balls in a rectangle shape
* Spread the filling on half the rectangle
* Cover with the second half and seal the borders
* Apply a little bit of butter on the waffle iron
* Cook the waffles for +/- 3 minutes
* Let the waffles rest on a grid before eating them
Tips:
* Roll the dough balls in icing sugar before cooking them to caramelize them
* The dough balls can be frozen
Warning:* Prepare the waffles 2 at a time, otherwise the filling will penetrate the dough and make it difficult to cook the waffles
* The waffle iron has to be really hot, so that the waffles don't stick
